Grain Free Egg Muffins

These muffins are high in protein and great for breakfast on the run

Ingredients

  • 6 large eggs, whisked
  • ¼ red onion, finely diced
  • 3 oz pastured bacon, finely chopped
  • 1 handful parsley, finely chopped
  • ½ red pepper (capsicum), finely diced
  • 1 tablespoon pesto

 

Method

  • Preheat oven to 350 degrees F.
  • Whisk the eggs with the pesto until well combined. Stir in remaining ingredients.
  • Pour mix into greased muffin tins and bake for approximately 20 minutes, or until golden brown. Baking time will depend on the size of your muffin tins.
