Liver Lover Smoothie Recipe

½ cup coconut milk (use canned coconut milk, NOT low fat variety)
½ cup fresh or frozen berries (strawberries, blackberries, blueberries etc), washed
½ banana, peeled
1 tablespoon of Synd-X Slimming protein powder
2 cups water (can vary this if you want it thicker)
Ice

Place all ingredients in blender and blend until smooth and well mixed. Sprinkle with nutmeg on top and add extra ice cubes if desired.

Please note – lots of folks think that coconut is unhealthy and fattening – well they are wrong! Coconut fat is rapidly metabolized for energy and is rich in lauric fatty acid, which is a prime ingredient in breast milk and acts as a natural infection fighter. Why not try the coconut oil for cooking?

Liver cleansing smoothie

Stir fried vegetables with tahini sauce

Serves 4

2 tablespoons Tahini Sauce
2 tablespoons Chilli Sauce
¼ Chinese cabbage, finely shredded
1 Onion, finely chopped
1-2 tablespoons Cold Pressed Olive Oil
2 tablespoons Soy Sauce – salt reduced
1 clove Garlic (Fresh), minced
½ Lime, juiced
1 Carrot, julienned
20 Snow peas, topped and tailed
½ bunch Broccoli, broken into small florets
4 Scallions, julienned
7 Baby Corn
½ cup Mung bean sprouts
2 Celery sticks, finely sliced
½ Bell Pepper – Red, finely chopped
1 Zucchini, finely sliced
2 teaspoons Fish Sauce
1 bunch Spinach, finely chopped
½ cup Cilantro, finely chopped

Sauteé the onion in the oil, then add the soy sauce, garlic, ginger, and lime juice. Add the vegetables, except the spinach, beginning with the carrot. Then add the chilli sauce and fish sauce.

Stir fry over a low heat. Add the spinach and chopped coriander/cilantro last and continue cooking for 5 minutes.

Serve with the lovely Tahini Sauce.

Quick and easy chicken drumsticks

Serves 4

8 chicken drumsticks
¼ cup lime juice
¼ cup olive or macadamia nut oil
2 teaspoons curry powder
2 cloves garlic, crushed
Salt and pepper, to taste

Combine all ingredients except drumsticks in a bowl. Make some superficial cuts in the drumsticks with a sharp knife. This will allow the flavor from the marinade to seep into the chicken flesh.

Place the drumsticks into the bowl with the marinade and rub it in well with your hands.

Cover the bowl with plastic wrap and place it in the fridge for an hour.

Cook the drumsticks in a preheated 425º F oven for approximately 40 minutes, or until cooked through and browned. Cooking time depends on the size of the drumsticks.
Turn the drumsticks over a couple of times in the oven while cooking.

Low carb Coconut Blueberry Pancakes

4 eggs

1 cup coconut milk

2 tablespoons coconut butter (different to coconut oil)

handful of fresh blueberries

½ cup coconut flour

1 teaspoon baking soda

Stevia, honey or maple syrup, to taste

Whisk the eggs together well in a bowl. Add all remaining ingredients except the coconut flour and blueberries and mix well.

Stir the coconut flour into the mixture, followed by the blueberries.

Pour ¼ cup of the mixture at a time onto a frying pan on medium heat. Cook 3 to 4 minutes on one side, then flip over and cook the other side.

Serve with fresh fruit and coconut cream.

Dairy free coconut mousse

Serves 1

½ medium avocado
1/3 cup full fat coconut milk
1 tablespoon coconut cream
½ banana
1 tablespoon chia seeds
1 tablespoon ground flaxseeds/linseeds
2 tablespoons fresh lime juice

Place all ingredients into a blender or food processor and blend until smooth.

Cover and place in the fridge for several hours or overnight to allow it to thicken.

Quick and Easy Home made mayonnaise

Store bought mayonnaise is almost always full of damaged omega 6 rich vegetable oil such as soy or canola oil. Making your own with olive oil or macadamia nut oil produces a far healthier and more delicious result.

2 eggs, preferably organic
2 tablespoons apple cider vinegar
½ teaspoon good quality salt
2 cups extra virgin olive oil or cold pressed macadamia nut oil

Place all ingredients except oil into a blender and process until combined. With the motor running, drizzle the oil in extremely slowly. It is important to do it slowly so that the mayonnaise thickens properly.

Place the mayonnaise into a glass jar and store it in the fridge for up to 2 weeks.

Low Carb Lemon Chicken

This is delicious served with salad or steamed vegetables.

Serves 4

3 chicken breasts, cut lengthways into cutlets
½ cup lemon juice
¼ cup tahini
2 tablespoons dijon mustard
½ teaspoon sweet (Hungarian) paprika
Salt and pepper to taste
Extra virgin olive oil, or ghee, or coconut oil for cooking chicken

Heat oil of choice in a frying pan over medium heat.  Season the chicken with salt, pepper and cumin.

Place chicken in frying pan and cook for a couple of minutes.

Combine all other ingredients together in a bowl.  Turn chicken over, pour sauce into the frying pan, reduce heat to low and cover the pan with a lid.

Cook for approximately 20 minutes, or until the chicken is cooked.

Raw beet salad

2 medium beets (beetroot), peeled
1 large carrot, peeled
1 handful parsley, chopped
¼ cup sunflower seeds
2 tablespoons lemon juice
1 tablespoon olive oil
2 tablespoons wine vinegar
1 tablespoon wholegrain mustard
2 stalks celery, chopped

Grate the beets and carrot either with a grater or food processor.  Place all salad ingredients into a bowl and mix thoroughly.  Serve

Marinated lamb chops

Serves 2

4 medium lamb chops
¼ cup olive oil
¼ cup lemon juice plus the zest of one lemon
1 teaspoon fresh or dried oregano, finely chopped
1 teaspoon fresh or dried rosemary, finely chopped
2 cloves garlic, minced
½ teaspoon salt

Rinse the lamb chops and pat them dry. Place the chops into a large zip lock plastic bag.

Combine all remaining ingredients in a small bowl and whisk until well combined. Pour the marinade into the zip lock bag and massage the bag well so the marinade is distributed evenly.

Place the bag in the fridge overnight.

The next day cook the lamb chops in a frying pan over medium heat.

Serve with salad or cooked vegetables.

Low carb Cajun Chicken

Serves 4

8 chicken drumsticks
3 tablespoons melted ghee, coconut oil, butter or lard
1 teaspoon ground cumin
2 teaspoons onion powder
2 teaspoons paprika
1 ½ teaspoons salt
1 teaspoon garlic powder
½ teaspoon cayenne pepper (or more if you like it hot)
½ teaspoon black pepper

Use a sharp knife to make diagonal slashes in the drumsticks.

Combine all remaining ingredients in a large bowl.

Brush a thick coating of the Cajun mix onto the chicken drumsticks and then cook them on a hot frying pan, turning frequently until cooked through.

Serve with a salad or cooked vegetables.

Vegan Lemony Coconut Balls

1 ½ cups almond flour (almond meal)
1/3 cup coconut flour
1 tablespoon raw honey or maple syrup or yacon syrup or stevia drops
¼ cup melted coconut oil
Juice from 3 lemons and grated rind from ½ lemon

Place all ingredients into a bowl and stir until well combined. Cover the bowl and leave it in the fridge for a couple of hours.

Once the mixture has hardened a little it will be easy to roll into balls. You can coat the balls in desiccated coconut if you like.

Cinnamon baked apples

2 medium red apples
1 teaspoon of ground cinnamon

Preheat the oven to 200ºF. Use a sharp knife or mandolin to cut the apples into very thin slices.

Remove the seeds and core from the middle and then arrange the apple slices on a lined baking tray. Make sure none of them overlap. Sprinkle the slices with cinnamon and place in the oven.

The slices take approximately 2 – 2.5 hours to cook and you’ll need to flip them over several times so they become crispy.

Lemon and Thyme Roasted Green Beans

These make a lovely side dish to roast meat or chicken.

Serves 4

1 tablespoon melted ghee or pastured butter
1 lb green beans, with ends trimmed
1 teaspoon dried thyme
½ teaspoon salt
1 thinly sliced lemon

Preheat the oven to 400ºF.

Arrange green beans in a roasting dish. Sprinkle with thyme and salt and drizzle ghee or butter on top. Arrange the thin lemon slices over the beans and bake in the oven for approximately 30 minutes.

You’ll need to stir the beans around once or twice during cooking.

Banana nut ice-cream bites

It is very easy to make delicious ice-cream at home without an ice-cream maker.

3 large well ripened bananas
1 cup nut butter (eg. Almond, cashew or peanut)
2 tablespoons unsweetened shredded coconut
2 tablespoons almond or coconut or hemp milk
Liquid stevia or honey or maple syrup, to taste

Place all ingredients into a blender and blend until smooth. Pour mixture into large ice cube trays or mini muffin cups and place in the freezer to set.
Once frozen, pop them out and serve 2 or 3 for dessert or as a snack.

Apple and Cinnamon Quinoa Porridge

What a great way to start your day! This gluten free, dairy free and nut free delight will get your engines started and keep you powering along until lunch time.

Serves 2

2 cups almond, hemp or coconut milk
½ cup quinoa
2 coarsely grated apples
½ teaspoon cinnamon
1 tablespoon whey protein powder

Soak the quinoa in water overnight. The next day drain and rinse it well under running water.

Place the quinoa and milk in a pot and cook over low heat until soft and creamy.

Stir all remaining ingredients into porridge and serve.
