These cookies are definitely safe to eat raw. They don’t require any baking and are absolutely delicious.
1 cup pecans
¼ cup unsweetened shredded coconut
¼ cup cocoa or cacao powder
10 medjool dates, pitted
Place all ingredients into a food processor and process until the mixture is smooth and it comes together in a ball. You may need to add a little water. This depends on how much moisture is in the dates and nuts you use.
Roll the mixture into a log and place it in the freezer for a couple of hours. Slice the log into round cookie shapes and serve.
