Quick and easy Mango Mousse

Ingredients
- Flesh from one mango
- 1 can full fat coconut milk
- ½ teaspoon vanilla extract
Method
- Place the coconut milk can in the fridge overnight.
- The next day place the mango flesh and vanilla into a powerful blender or food processor. Open the can of coconut milk and scoop only the solid component into the blender. You can save the watery part for use in a smoothie or just drink it.
- Blend all ingredients well until the mixture is smooth. Place into serving bowls, cover and refrigerate for several hours before serving.
