Sugar Free Coconut Balls
These delicious morsels are so easy to make. Keep them handy if you’re getting a sugar craving. The good fats in coconut provide energy and help to balance your blood sugar.
Ingredients
- 2 cups raw cashews
- 1 cup unsweetened shredded coconut
- 2 tablespoons coconut oil
- Approximately ¼ cup fresh lime juice
Method
- Place the cashews into a food processor and process until they become a fine meal. Add all remaining ingredients and process until smooth. You may need a little more or a little less lime juice. This depends on how much moisture is present in the nuts and coconut you have purchased.
- Shape the mixture into balls and store in an airtight container in the fridge.
