Breakfast muffins

There is no flour in these muffins. They make a convenient and filling breakfast for busy mornings.

8 eggs
1 red bell pepper, diced into small pieces
¼ cup sliced, pitted olives
½ brown onion, finely diced
2 button mushrooms, finely diced
1 tablespoon water
1 teaspoon dried oregano
Salt, to taste
Optional – bacon, ham, or smoked salmon

Preheat the oven to 350ºF.

Beat the eggs together in a bowl.  Stir in all remaining ingredients.

Pour mixture into greased or lined muffin tins and bake for approximately 20 minutes, or until cooked through.
