This is a delicious low carbohydrate dinner for cool evenings.
Serves 2
2 lamb shanks
1 cup beef or vegetable stock
1 brown onion, chopped
3 cloves garlic, finely minced
1 tablespoon pastured ghee or olive oil
4 sprigs fresh rosemary, finely diced
Salt and pepper, to taste
Season the lamb with salt and pepper. Heat the ghee or oil in a skillet over medium heat and sear the shanks evenly on all sides until lightly browned.
Place the shanks into a crock pot or slow cooker. Place the onion, garlic and rosemary into the skillet and sauté until softened.
Place all remaining ingredients into the crock pot and slow cook for 4 hours on a low heat.
Serve with vegetables or salad.
